Ariel McQueen at Sarau
11 – 28 June 2026 · Mexican cuisine
Past residency.
The chef and the residency
Born in Mexico City, Ariel McQueen developed his cooking through different kitchens and influences. He opened Sarau’s first guest-chef residency with a menu connected to his roots.
The nine-course menu told a story of Mexico through ingredients, memory and fire. Dishes from that residency included a St. Patrick oyster with pico de gallo and strawberry-and-chilli granita.
This residency has ended. The dishes described belong to those dates and are not the current menu.
